Suggested Uses: This really great oil that has a way of immediately conjuring thoughts such as, “Wow, I just want to drown a tomato in that stuff.” Or, “Can you imagine roasting a whole fish with that one?”
We use it at home for everything from dousing fresh arugula with big, thick parmesan shavings, to making our favorite olive oil pastry crust, to frying a couple over easy eggs. The smell in the kitchen when the oil first warms up is a real air freshener!
Tasting Notes:
The Trespaldum Biologico explodes with aromas of cut grass, tomato leaves, and artichokes. From there, it hits the palate with an herbiness and continues through with a medium spiciness. The thing we really like is the mild bitterness - a sort of chicory element - that arrives in the palate only after 5-7 seconds. This allows the piquancy to pass and leaves the mouth with a really nice, fine dryness.
